As for many with adult children our holidays are looking more like a sprawl. This year we must divide and conquer. All this entertaining demands that memorable meals come together with a minimum of last minute effort. For selfishly I want to be with those I love, not tied to my overused stove. Here’s the first of our three “Christmas” dinners.

Busy week, busy day. What to have for dinner? Greek burgers and Israeli couscous with roasted grape tomatoes and basil. My take on Greek excludes lamb. Not sure why but I can’t stomach it. Lamentably lamb was the celebratory meal of choice in my first husband’s family. Because he was the last of five to marry there was lots to celebrate.

The big day finally arrives. The house is clean, tables set, music laid out, serving dishes in their place, bar is stocked, nametags printed. The freezer and frig hold all the components for tonight’s dinner for twenty. The beauty of this meal is that it is served room temp. Meaning I can set it all out right before the first guests arrive

One of the many gifts my mom gave me was showing me the importance of putting everything in its place. There is an air of elegance if everything is exactly where it is supposed to be. For a large party you’ll strike gold if you set out your serving pieces the night before. Marking each piece with an identifying post-it is a certain silver lining.

While passed hors d’oeuvres are best for a crowd, it’s prudent to have a few bites purposely positioned during cocktail hour. Strategically place a crisp crudités alongside a light herb mayonnaise. And nothing beats a savory nut alongside a creamy olive. The beauty all can be made a day ahead. Giving you plenty of time to whisk up

Today marks the arrival of my college roommates. Not a typical fan of girls’ night out, and certainly not of its extended version (women being best served with a generous dose of men) this trio is an exceptional exception. My hubby was supposed to be away for business but changed his plans when he heard who was coming, and why not these are

Who dares venture out for dinner on Valentine’s Day, appropriately dubbed Amateur Night. Dining in one can splurge with a plethora of the best ingredients simply prepared. Foie gras, salmon roe, black truffles, and chocolate- now that if that doesn’t put you in the mood what else will. My Valentine has a soft spot for all of the above.

Weeknight business dinners call for quick thinking and definite pre-prepping. The key is finding something impressive that won’t wreak havoc on your kitchen or midweek schedule. Duck confit is one of my all time favorites. Before we moved it was my go-to comfort food at Fire, our standing Friday night dinner reservation in Cleveland.

Here’s one to wrap up and put under your tree. A scrumptious supper where the prep is practically done the night before. Having family friends over to take in the lights and exchange a gift or two. The best present for the hostess is spending time in front of the fire rather than with her head in the oven.
