About to kidnap all five kids for our first destination holiday, really shaking things up this holiday season. That said there are circumstances that are certainly sacrosanct, so stockings are stuffed and tucked in my bag (six in all because the big guy would be bummed if he was left out of that fun). And because Christmas eve morn is literally on the run I thought I’d try to whip up a little “home” that could make it’s way on a train, plane, or automobile.

Christmas brunch conjures up visions of pancakes, warm maple syrup, and crisp thick bacon. While our usual eggs Benedict would never make it out the door I decided to look to my picnic guru, Ina, to see what she has successfully transported in and out of her holiday Hamptons.

A warm blini right out of the frying pan can’t be beat. But one made the day before and gently warmed before topping and packing comes in for a close second. Buckwheat blinis with smoked salmon and dill crème fraiche are certain to please.

Combine buckwheat and white flour. Then in a separate bowl whisk together the milk, egg and tablespoon of clarified butter.

To clarify butter gently heat a stick in a saucepan over low heat. Skim off the white foam on the surface. Allow the butter to sit at room temp, then carefully pour off the clear liquid.

Back to the blinis- drop tablespoonfuls onto a hot skillet, cook over medium low heat until bubbles form about two minutes. Flip and cook for another minute until golden brown.

If not serving immediately let cool to room temp, cover and refrigerate for up to 24 hours. Gently re-warm in a 50% power microwave for a minute.

Top each blini with with ¼ tsp dill crème fraiche. Fold over one half slice smoked salmon and place on top of the blini. Garnish with a sprig of dill.

Baste with pure maple syrup at the end.

A simple fruit salad of fresh berries can’t be beat.

As for a sweet ending, the big kids can always dig into their stockings. Merry Christmas all!
