it’s getting chili
what’s for dinner- cooking for the famMy husband believing I should be exposed to all the local landmarks took me to Skyline Chili the other weekend. There I had two of their Coneys, baby hotdogs smothered in chili and heaped with finely grated cheddar. The steamed buns were delicious but I gotta say I’m not a fan of cinnamon in my chili. And frankly aren’t dogs best served in a ballpark?
My version of chili is loaded with fresh veggies. Diced onion, carrots, and red pepper and minced garlic.
Hot chili powder, cumin and a big pinch of salt.
Stirred together with petite diced tomatoes, tomato sauce, beef broth and light kidney beans. Served over rice and topped with chopped onions, cilantro, grated cheese and sour cream.
On the side some freshly made salsa
And a batch of guacamole
A little more southwest or Tex-mex than it’s Cincinnati counterpart but in my book it’s a winner just like my alma mater.
