1 14.5 ounce can whole tomatoes with juice

1/3 cup chopped onion

¼ cup chopped red pepper

1 small clove garlic, minced

1/4 teaspoon jalapeño, seeded and finely chopped (or to taste)

1/8 teaspoons sugar

¼ teaspoons salt

1/8 teaspoons ground cumin

1/3 cup chopped cilantro

1 1/2 tablespoon lime juice



Combine whole tomatoes, onion, red pepper, jalapeño, garlic, sugar, salt, cumin, lime juice, and cilantro in a bowl. With a hand blender pulse until desired consistency about 10 to 15 pulses. Test seasonings

Refrigerate for at least an hour


Makes 3 cups
