For months I’ve been power walking and picking up Pilates so I can be in tiptop dining shape for the trip of a lifetime. I’m looking forward to discovering my Scandinavian roots one bite at a time.
While I’m away here’s a simple fast, super fresh appetizer to transport you from the Baltic to the North Sea- smoked salmon on cucumber rounds.

With a single zester, lengthwise trim off four equal ribbons.

Cut into 1/8 inch rounds.

Combine the whipped cream cheese, finely chopped red onion, and chopped fresh dill. Season with freshly ground pepper.

Separate the slices of smoked salmon and cut into ½ ribbons that are about 1 ½ inches long.

Roll a salmon ribbon into a rosette.

Place a dap of cream cheese mixture in the center of a cucumber round.

Place a salmon rosette and place on top the cream cheese on the cucumber.

Garnish with a small sprig of fresh dill.
