cookie crumbles
perfecting the "done before they arrive" party- a work in progressThe party doesn’t stop just because the lights go out. Last Friday we got slammed with an unbelievable storm. Winds over 100 miles an hour and temps in the triple digits. Like many we lost power. Five days later and it’s still out. Weather be damned an invitation still stands and my charge for the Fourth is dessert. Sadly my secret stash that I’d squirreled away in the freezer has long since melted. Time to whip up a new one in no time flat.
Here’s a grown up version of a holiday staple, shortcake parfaits served up in martini glasses with a little liquid fireworks of its own.
Toss strawberries and blueberries with Grand Marnier. Let sit at room temperature for 30 minutes to macerate. Meanwhile break the cookies into large “crumbles”.
Combine the heavy cream with the powdered sugar and vanilla.
Whip until soft peaks form. With no electricity it's time to get out the whisk.
Low martini glasses are perfect for desserts.
To assemble spoon cookie crumbles into the bottom a martini glass.
Spoon berries over the cookies. Drizzle with Grand Marnier juice. Top with a dollap of whipped cream.
May we soon have independence over this heat and weather, Happy Fourth!
