turkey and blueberry jam sandwich
Ingredients:
2 small or 1 large ciabatta roll, split
4 slices Gruyere
Mayonnaise
Blueberry jam (high-quality)
4-6 ounces deli turkey, sliced
Handful of arugula (about 1 cup)
1 tablespoon extra-virgin olive oil
1⁄2 tablespoon red-wine vinegar
1 teaspoon finely chopped red onion
Salt and pepper
Directions:
Heat the oven, or toaster oven, to 450 degrees. Place the ciabatta halves cut sides up on a sheet pan. Place the Gruyere cheese on the top of each piece. Bake until the cheese is melted, about 3 to 5 minutes.
Spread a generous layer of blueberry jam over the melted cheese on the top half of the roll. Spread a generous layer of mayonnaise on the bottom half of the roll, then top with the sliced turkey.
In a bowl, combine the arugula, olive oil, vinegar and onion. Season with salt and pepper. Place on top of the turkey. Close the sandwich and slice in half.
