watermelon margarita
Ingredients:
6 ounces pureed fresh watermelon juice (do not strain)
2 ounces Mezcal
2 ounces Cointreau
2 ounces freshly squeezed lime juice, rinds reserved
4 thinly sliced jalapeño rounds
For the salted rim:
1 tablespoon fine sea salt
1 teaspoon Tajín
Directions:
Fill a cocktail shaker with ice. Add the watermelon juice, Mezcal, Cointreau, lime juice and two jalapeño slices. Shake well to combine.
For the salted rim, combine the sea salt and Tajín in a small shallow bowl or plate. Using one of the reserved lime rinds run it along the rim of two rocks glasses. Dip the rims into the salt mixture. Fill the glasses with ice.
Shake the cocktail shaker vigorously, then strain the margaritas into the prepared glasses. Garnish with a jalapeño round. Serve immediately.
