greek turkey burgers

1 lb. lean ground turkey

1 c. chopped baby spinach

1 T. panko breadcrumbs

1/3 c. crumbled feta

¼ t. dried oregano

½ t. cracked pepper

1 t. olive oil

4 T fresh Tzatziki *

1/3 c. thinly sliced roasted red peppers

4 rosemary olive oil rolls (or some other yummy roll)

* available in most prepared food areas of good grocery stores



Combine turkey, spinach, panko, feta, oregano, cracked pepper and olive oil in a mixing bowl.

Lightly toss. Form into 4 burgers.

Coat grill lightly with vegetable oil. Sear burgers on both sides, reduce heat to medium and then cook 8-10 minutes until internal temp reaches 165 degrees.

Top each burger with 1 T. tzatziki and 3 or 4 roasted red pepper strips. Serve on toasted rolls if desired.
