feta and roasted red pepper dip

1 large roasted red pepper, chopped

1/2 jalapeño, seeded and minced

1 cup feta crumbled

1 T red pepper oil from the jar



Blend all with a hand blender.

Serve with pita, cucumber slices, julienned red pepper, and/or carrot chips


Makes 1 cup
