broccolini with grilled onions and pine nuts
Ingredients
2 bunches broccolini, stems trimmed
½ Vidalia onion, sliced
2 Tbsp toasted pine nuts
Canola oil spray
1 Tbsp butter
1 tsp fresh lemon juice
Directions
Steam broccolini in a covered microwave safe dish with ¼ inch water for three minutes or until tender/crisp. Drain and refresh with ice water. Drain and set aside.
Heat Panini grill. Spray with canola oil. “Grill” onions for three minutes until browned. Set aside.
Heat butter in a large sauté pan over medium heat. Add broccolini. Season with salt and pepper. Add lemon juice and toss. Add onions and heat through.
Sprinkle with pine nuts and serve.
