shrimp roll sliders
Ingredients:
1 lb cooked large shrimp, shelled and roughly chopped
¼ cup chopped sweet onion
¼ cup chopped celery
1 tsp chopped fresh dill
1 Tbsp fresh lemon juice
2 Tbsp mayonnaise
Salt and pepper
12 freshly baked slider buns
2 Tbsp butter melted
Directions:
Combine chopped shrimp, celery, onion and dill. Add lemon juice and mayo and toss. Season with salt and pepper. Cover and refrigerate, can be made several hours ahead of time)
Preheat oven to 350 degrees. Split the top of each slider bun, leave bottom intact. Gently ease the split open. Lightly brush inside split with butter. Bake for 5 minutes or until lightly toasted. Set aside.
Fill each slider bun with a large spoonful of shrimp mixture. Serve immediately.
