burrata, tomato and basil salad

(a slight variation on the caprese)



3 ripe tomatoes (preferably homegrown)

1 large round burrata cheese, drained

¼ cup fresh basil, slivered

salt and pepper



Core and slice tomatoes into ¼ inch slices.

Carefully slice burrata cheese into ¼ inch slice.

On a platter or on individual plates- alternate slices of tomato with slices of burrata. Season with salt and pepper. Sprinkle with slivered fresh basil.


Serves 4


(Note: can be assembled an hour ahead of time)
