shrimp for grits

Ingredients:

1 ¼ pound shrimp, peeled and deveined

6 slices bacon, chopped

2 cloves garlic, minced

4 teaspoons lemon juice

2 tablespoons chopped parsley

4 scallions, thinly sliced

 

Directions:

Make the grit soufflé (link to recipe below). Remove from oven.

Rinse shrimp and pat dry with paper towel.

In a large skillet, cook the chopped bacon over medium heat until crisp. With a slotted spoon transfer to a paper towel lined plate. Keep 4 teaspoons of bacon drippings in the skillet. Add the shrimp to the bacon grease. Sauté the shrimp and the garlic until the shrimp just turn pink. Add the lemon juice, parsley, and scallions. Sauté for another 2 minutes.

Spoon the grits into soup pasta bowls. Top with the shrimp mixture. Sprinkle with the crisp bacon. Serve immediately.
