chinese chicken salad

Ingredients:

For the dressing

2 tablespoons rice vinegar

2 tablespoons toasted sesame oil

1 ½ tablespoons peach or apricot preserves

1 ½ tablespoons mayonnaise

2 teaspoons soy sauce

2/3 teaspoon chili powder, more to taste

1/3 teaspoon onion powder

Kosher salt

 

For the salad

5-6 ounces shredded cooked chicken meat, about 1 ½ cups

½ cup wonton strips

1-2 romaine hearts, coarsely chopped

3 scallions, white and green parts, sliced into ¼” pieces

½ packed cup coarsely chopped fresh cilantro leaves with tender stems

¼ cup packed cup coarsely chopped fresh mint leaves

 

Directions:

 In a large bowl, whisk together the vinegar, sesame oil, peach preserves, mayonnaise, soy sauce, chili powder and onion powder, and season to taste with salt. Set aside.

Toss the chicken with enough dressing to lightly coat.

Place 4-6 handfuls of chopped romaine, the sliced scallions, chopped cilantro, mint, and a quarter cup of wonton strips in a large bowl. Toss with enough dressing to lightly coat the greens. Season with a pinch of salt if needed. Divide the greens among plates or onto a platter. Top with the dressed chicken and the remaining fried wontons and serve immediately with extra dressing on the side.
