pureed cauliflower
Ingredients
1 Head Cauliflower, cut into uniform flowerets
2 Garlic Cloves peeled
4 cups Chicken Broth (or to cover)
1 Tbsp Unsalted Butter
Salt and Pepper to taste
Directions
Place the cauliflower flowerets and garlic in a saucepan. Add chicken broth to cover. Bring to a boil and simmer until tender, about 15 minutes.
Drain thoroughly, Reserving ½ cup of the cooking liquid. Return the cauliflower to the pan and add the butter.
Puree carefully with a hand blender until almost smooth. Add some of the reserved cooking liquid a couple tablespoons at a time if necessary.
Season with salt and pepper.
This can be made in advance. Put in a microwave safe dish with a cover. Reheat in the microwave until heated through on 50% power.
