gruyère puff
Ingredients:
3 large eggs
½ cup whole milk
½ cup all-purpose flour
½ teaspoon kosher salt
Freshly ground black pepper
3/4 cup grated Gruyère cheese (about 3 ounces)
3 tablespoons unsalted butter
Coarse sea salt, for sprinkling
Directions:
Preheat the oven to 400 degrees. Place a 9-inch ovenproof skillet in the oven while it heats.
Meanwhile with a hand blender beat the eggs, milk, flour, salt and pepper in bowl until smooth and aerated. Let the batter sit while the oven preheats.
Carefully remove the hot skillet. Place the butter in the skillet and swirl to coat all sides.
Stir the cheese into the egg mixture. Pour the batter into the buttered skillet. Transfer the skillet back into the oven. Bake until puffed and dark golden, about 30 minutes. Sprinkle with salt, serve puffed and piping hot.
Serves 4
(Wonderful served with an arugula salad as a first course or as a light lunch.)
