curry turkey finger sandwichesIngredients:
10 slices raisin pecan bread
½ cup scallion cream cheese spread
¼ cup curried chutney
¼ pound thinly sliced smoked turkey
1 cup arugula
Directions:
Place two slices of raisin pecan bread side by side to make a sandwich. Spread each slice generously with scallion cream cheese spread. Top one slice with a teaspoonful of curry chutney. Top that slice with a folded over slice of smoked turkey. Top the other slice with arugula leaves.
Close the sandwich. Repeat with the other slices of bread.
Cut each sandwich into quarters. Place on a platter. Cover with a barely damp paper towel until ready to serve up to an hour ahead of time.
