cucumber and onion salad
Ingredients:
6 small Persian cucumbers, or one English cucumber
1 small sweet onion
Kosher salt
¼ cup Garlic Expressions salad dressing
Directions:
Thinly slice the cucumbers and put in a nonreactive bowl. Halve the onion, then thinly slice. Add to the cucumbers in the bowl. Add a big pinch of salt and gently massage the cucumbers and onions. Let sit at room temperature for fifteen minutes until they throw off their water. Carefully drain the water from the vegetables and discard. Add the Garlic Expressions salad dressing and toss well. Cover and refrigerate. Stir every few hours.
The cucumbers and onions can be made a couple days ahead of time.
