citrus marinated chicken salad

2 Large Chicken Cutlets (@ 3/4 lb total)

1/2 tsp freshly grated lemon peel

1/2 tsp freshly grated orange peel

1 Tbsp olive oil

Salt and pepper

Squeeze of fresh lemon and orange

4 large handfuls mixed greens

1 julienned yellow pepper

1 julienned red pepper

1 ripe avocado sliced

Citrus Dressing (see below)


In a dish combine the lemon and orange peel and juice with the olive oil. Season with salt and pepper. Add chicken cutlets, turning to cover with marinade. Let sit for 30 minutes.

Heat grill to medium high. Grill the cutlets until just cooked through about 3 minutes per side. Let cool then slice.

Place one handful of greens on each plate. Around greens alternate peppers and avocado. Drizzle with 1 Tbsp citrus dressing. Top with ½ sliced chicken cutlet. Drizzle with another Tbsp dressing.

Citrus Dressing


1/4 tsp freshly grated lemon peel

1/4 tsp freshly grated orange peel

1/8 tsp freshly grated ginger

1 Tbsp fresh lemon juice

1 Tbsp fresh orange juice

1 Tbsp rice vinegar

1/4 cup olive oil

salt and pepper to taste


Whisk the above together. Season with salt and freshly ground pepper
