bok choy stir fry
Ingredients:
3 T olive oil, divided
6 Baby Bok Choy, quartered
1 Red Pepper, julienned
1 Carrot cut into ribbons
3 cloves garlic thinly slices
1 cup snow peas, trimmed
1 T lemon juice
½ tsp salt
¼ tsp freshly ground pepper
Directions:
Heat 2 T oil in a large nonstick skillet over medium-high heat
Add the baby bok choy and sauté for 5 minutes until lightly browned and crisp-tender. Transfer to a plate.
Add 1 T oil to the pan and sauté the pepper, carrot and garlic for 1-2 minutes until garlic begins to brown
Add the snow peas and cook for one minute more.
Add the cooked bok choy, lemon juice and salt and pepper and heat through
Serves 4
