blue cheese dressing

2 ounces high-quality blue cheese, chopped

½ cup mayonnaise

½ cup heavy cream

1 tablespoon white wine vinegar

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper



Place the cheese, mayonnaise, heavy cream, vinegar, salt and pepper in the bowl of a food processor fitted with a steel blade. Process until smooth.

Place in lidded container and refrigerate.

Makes 1 ¼ cups
