zucchini noodlesIngredients:
2 whole medium zucchini
1 Tablespoon Butter
1 Tablespoon Olive Oil
salt and pepper
Directions:
Use a spiral vegetable slicer to create zucchini noodles or a vegetable peeler to create thin zucchini ribbons. You will want about 4 ounces per person.
Heat a nonstick skillet over medium-high heat. Heat the butter and olive oil. Add the zucchini and toss in the pan for 1 to 2 minutes. Sprinkle with salt and pepper.
Serve immediately as is or with topped with your favorite pasta sauce.
