whipped sweet potatoes
Ingredients:
3 large sweet potatoes
2 tablespoons butter
salt and pepper
Directions:
Preheat oven to 350 degrees. Line a rimmed baking sheet with foil.
Prick sweet potatoes several times with a fork. Place on the prepared baking sheet. Bake until very soft, 1- 1 ½ hours. Cool enough to handle, halve the potatoes then squeeze flesh into a large bowl. With an electric mixer whip the potatoes with the butter until fluffy with ½ teaspoon salt and several grinds of pepper.
Place in a buttered ceramic dish, cool completely, cover and refrigerate. The sweet potatoes can be made a day in advance.
Bring to room temperature before baking at 350 degrees for 20 to 25 minutes until heated through. Top with mini marshmellows if you like yours retro.
