truffle orzo with broccolini

1 bunch broccolini- top florets only

1 ½ cups orzo

4 cups chicken broth

2 T olive oil

2 cloves garlic- peeled and slivered

½ cup heavy cream

1 T butter

3 T shredded Parmesan cheese

2 T black truffle butter

1 tsp cracked black pepper

Salt to taste



Steam broccolini florets in a little slated water in microwave until barely tender- approximately 2 minutes. Drain and refresh with ice water. Drain again and reserve.

Bring chicken broth to a boil. Add orzo and cook according to package. Drain and set aside.

In a medium pan sauté the garlic in the olive oil until just golden. Add the broccolini, stir. Add the orzo, stir to combine. Turn heat to low and add the heavy cream and 1T of butter. Add the cheese, stir until melted. Add the truffle butter and pepper, season with salt and combine.

Serve in a bowl family style with more Parmesan on the side.
