sweet potato bake
Ingredients:
1 29-ounce can candied yams, drained and mashed
1 8-ounce can crushed pineapple
¼ cup melted butter
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon cinnamon
1 cup mini marshmallows
Directions:
Combine the mashed yams, crushed pineapple, melted butter, salt, pepper and cinnamon.
Place half of the mixture in a buttered casserole or deep pie dish. Scatter half of the marshmallows over the potatoes. Top with the remaining potato mixture, then the rest of the marshmallows.
Cover loosely with foil and bake for 30 minutes in a 350-degree oven. Uncover and bake for an additional 10 minutes until golden.
Serves 6-8
