string beans with sautéed shallots
Ingredients:
1 pound French string beans (haricots verts), ends removed
Kosher salt
2 tablespoons unsalted butter
3 large shallots, large-diced
1/2 teaspoon freshly ground black pepper
Directions:
Steam the green beans in a covered microwave-safe dish with ¼ inch of water for 2-3 minutes until crisp tender. Refresh in a an ice water bath. Drain well and set aside.
Heat the butter in a very large sauté pan and sauté the shallots on medium heat for 5 to 10 minutes, tossing occasionally, until lightly browned. Add the green beans to the shallots with 1/2 teaspoon salt and the pepper, tossing well. Heat just until the beans are hot.
Note: the beans can be steamed and refreshed and the shallots sautéed earlier in the day.
