sautéed peas with proscuitto
Ingredients:
2 cloves garlic
2 Tbsp olive oil
2 Tbsp 1/4" dice prosciutto
1 10-ounce package frozen tiny peas, thawed
2 Tbsp parsley
salt and freshly ground pepper
Directions:
Heat the olive oil and garlic cloves over medium-high heat until the cloves are well colored. Remove the garlic. Add the diced prosciutto and sauté for one minute.
Add the thawed peas, parsley, a pinch of salt and several twists from the pepper mill. Combine, cover and cook for four minutes on medium heat. Test for doneness and seasoning.
