pecan pie
Ingredients:
2 T unsalted butter
3/4 cup packed brown sugar
1 tsp vanilla
¼ tsp salt
3 eggs
1+ cup chopped pecans
¾ cup light corn syrup
1 unbaked 9” deep-dish piecrust
Directions:
Preheat oven to 350 degrees.
Combine the butter, brown sugar, vanilla and salt in a food processor. Add the eggs one at a time, pulsing after each addition.
In a large bowl combine the sugar/egg mixture with the chopped pecans. Stir in the light corn syrup. (Do not do these last two steps in the food processor.)
Pour into the unbaked piecrust and bake at 350 degrees for 35-45 minutes or until lightly brown and slightly firm in the center. (The pie will thicken as it cools.)
