overnight oats
Ingredients:
1 ½ cups old-fashioned oats
6 ounces plain Greek yogurt
1 ¼ cups almond or skim milk
Pinch of kosher salt
1–2 tablespoons of maple syrup, optional
¼ teaspoon of vanilla, optional
Garnishes:
Greek yogurt
Sliced fruit and/or berries
Honey
Directions:
Combine the oats with a pinch of kosher salt. Stir in the Greek yogurt. Slowly add the milk, stirring to combine thoroughly. Stir in the maple syrup and vanilla if using.
Cover and refrigerate overnight. Oats can be made four days in advance.
Before serving stir well. Thin with a little milk if needed. Spoon oats into a bowl. Top with a dollop of Greek yogurt, add fresh sliced fruit or berries, drizzle with honey if desired.
