olive bites
Ingredients
I medium onion, chopped
1 + cup grated New York sharp cheddar cheese
1 cup mayonnaise
2 small cans chopped ripe olives, drained
1 tsp curry powder
1 package of 6 English muffins, split
salt and pepper
Directions
Combine the onion, grated cheese, mayonnaise, olives and curry powder.
Divide mixture among the twelve English Muffin halves. Spread to edges, pressing into crevices. Cut each muffin into 6 equal wedges. Season with salt and pepper.
Place on a cookie sheet, cover with plastic wrap and freeze overnight.
Put frozen wedges in a zip-loc bag and freeze.
Preheat oven to 350 degrees. Place frozen olive bites on a cookie sheet and bake for 15 minutes or until bubbly and light brown.
Makes 72 canapes
