mâche salad
Ingredients:
6 large handfuls of mâche rosettes, or other mixed greens
2 tablespoons walnut oil, or to taste
pinch of black truffle salt
freshly ground pepper
Directions:
Place the washed and spun greens in a new large kitchen garbage bag.
Drizzle on a few tablespoons of walnut oil. Take care to not overdress, you can always add more. Sprinkle with a pinch or two of black truffle salt. Be careful not to overdo it, it packs a lot of flavor. Add a few grinds of black pepper.
Twist the bag to close, making sure you have lots of air in the bag. Give it a gentle shake.
Taste for seasoning to see if you need more oil, salt, or pepper. Gently toss.
Open the bag slightly and carefully let the dressed greens fall into your serving bowl.
