lemon-chive dressing
Ingredients:
1 cup grape seed oil
1/3 cup fresh lemon juice
1/2 cup fresh chives
1 T fresh tarragon
1 1/2 t sea salt
1/2 t black pepper
1 pound baby greens
1/2 cup roasted sunflower seeds
Directions:
Put the oil, lemon juice, salt and pepper in a blender and emulsify. Add the chives and tarragon and pulse until combined.
For each serving toss 1+ tablespoon dressing with a generous handful of baby greens. Serve with several blanched asparagus spears and a generous tablespoon of crumbled soft goat cheese. Top with a sprinkle of roasted sunflower seeds.
Makes 2 cups
