lemon asparagus
Ingredients:
2 bunches thin asparagus spears
pinch of salt
2 T butter
Juice of ½ lemon
Directions:
Rinse and trim the asparagus.
In two batches, place one bunch of asparagus in an oblong microwave safe dish. Sprinkle with salt. Add one inch of water to the dish. Cover and Microwave for 1 ½ to 2 minutes or until almost tender (it will depend on the thickness of the spears).
Drain hot water. Immediately fill dish with ice water. Let sit for a minute or two. Drain well. Repeat with the second bunch of asparagus.
Wrap asparagus in paper towel and place in a Ziploc bag and refrigerate. This can be done up to a day ahead of time.
Right before serving, heat the butter in a large sautè pan. Add the asparagus, toss with butter until warmed through. Spritz with lemon juice. Season with salt and pepper..
Serve immediately.
