green beans almandine
Ingredients:
1 pound thin green beans, trimmed
2 T butter
1/3 cup sliced almonds
Directions:
Steam green beans in 4 tablespoons of water covered in the microwave for two minutes, or until crisp tender (do not overcook). Drain and refresh with cold water. Drain well. This can be done hours in advance. Place the beans in a ziploc bag with paper towel and refrigerate.
Melt butter over medium heat in a skillet. Add the almonds and sauté stirring until just beginning to turn golden. Remove the almonds from the skillet. Add the green beans and heat through. Season with salt and pepper. Toss with the sautéed almonds.
Serves 4-6
Note:
French green beans in a microwavable bag can be used. Steam for no more that 1 ½ to 2 minutes. Carefully open and refresh with cold water. Continue as listed above.
