6-8 Italian meatballs (recipe below)

1 cup marinara sauce, such as Rao's or (recipe below)

1 small ball burrata cheese

2 large handfuls fresh arugula

1-2 tablespoons walnut oil

1-2 teaspoons balsamic vinegar

Kosher salt and freshly ground pepper

6-8 crostini (recipe below)

Fresh basil, for garnish



Warm the meatballs in a small saucepan with the marinara.

In a large bowl drizzle the arugula with walnut oil and little balsamic vinegar to taste. Toss with a pinch of kosher salt and freshly ground pepper.

Remove the burrata from its container and drain. Cut into four slices.

Place the arugula salad on one side of the plate. Lift the meatballs out of the sauce and place on the other side of the plate. Spoon a little marinara around the meatballs. Place two slices of burrata in the middle. Garnish with some fresh basil. Place crostini on the top of the plate above the arugula salad and burrata.
