citrus marinade
Ingredients:
2 tablespoons freshly grated lemon peel
2 tablespoons freshly grated orange peel
1/2 cup olive oil
¼ cup freshly squeezed lemon juice
¼ cup freshly squeezed orange juice
Salt and pepper
Directions:
Combine the lemon and orange peel and juice with the olive oil. Season with salt and pepper.
Can be made a day ahead of time. Cover and refrigerate.
For Citrus Marinated Chicken Breasts:
Before grilling toss chicken breasts with marinade. Let sit for 30 minutes.
Heat grill to medium high. Grill chicken breasts until just cooked through about 5 minutes per side depending on the thickness.
Let rest for at least 10 minutes. Serve warm or cool completely, cover and refrigerate. Can be done earlier in the day. Bring to room temp before serving.
