cheese dreams
(Adapted from Melissa Knific)
Ingredients:
1 pound loaf sturdy white sandwich bread, such as Pepperidge Farm
2 cups finely shredded sharp cheddar (8 ounces)
1 cup salted butter, softened (8 ounces)
1 large egg
1⁄4 cup heavy cream, at room temperature
11⁄2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1⁄2 teaspoon mustard powder
Salt
1 to 2 teaspoons hot sauce, to taste (optional)
Directions:
Heat oven to 375 degrees. Line a baking sheet with parchment paper.
Trim the crust off the bread.
In a medium bowl, beat the cheddar and butter with a hand mixer on medium speed until well combined. Add the egg; beat until combined. Add the heavy cream, Worcestershire sauce, garlic powder, mustard powder, 1⁄4 teaspoon salt and hot sauce (if using) and beat until combined.
Spread a spoonful of cheese mixture on each slice of bread. Top one slathered slice with another. Spread a little more cheese mixture around the sides like you are icing a cake. With a serrated knife, carefully cut each into four squares. Smooth the cheese around each square and place on the baking sheet, cheese-side up about 1 inch apart.
Bake until the sandwiches are golden brown, about 15 to 20 minutes. Serve immediately.
Makes about 36 bite sized squares
(Note- these sandwiches can be fully prepped and refrigerated until they’re ready to bake, up to a day ahead, just add an extra minute or two in the oven since they’ll be chilled. Or chill, wrap and freeze, adding about 10 minutes to the cooking time.)
