charred snow peas

Ingredients:
1 tablespoon vegetable oil
½ pound snow peas, trimmed
3 scallions, trimmed, chopped in 1-inch lengths
Salt and pepper
Pinch red pepper flakes, to taste
2 garlic cloves, minced
¼ teaspoon grated ginger
¼ teaspoon toasted sesame oil
1 ½ tablespoons crushed roasted peanuts, optional
1 tablespoon roughly chopped cilantro, optional
Directions:
Put vegetable oil in a large nonstick pan over high heat. When oil looks wavy, add the snow peas and scallions and season well with salt and pepper. Cook the vegetables over high heat, stirring constantly, until cooked through and lightly charred, 2 to 3 minutes. The peas should be bright green and crisp-tender. Add a pinch of red pepper flakes.
Add the garlic, ginger and sesame oil, toss well and cook for 1 minute more. Transfer to a serving platter or plates and sprinkle with peanuts and cilantro.
Serves 2-3
