blue cheese dressing

2 ounces roquefort cheese, crumbled
1/4 buttermilk
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
Kosher salt and freshly ground pepper

Whisk together the roquefort, buttermilk, mayonnaise, sour cream and lemon juice. Season with salt and pepper.
Makes about 1 cup
