asparagus with wasabi mayonnaise
Ingredients:
1 large bunch thin asparagus spears, trimmed
½ cup mayonnaise
2 tsp soy sauce
1/2 tsp sugar
1 tsp fresh lemon juice
1 tsp wasabi paste
Directions:
Steam asparagus in a covered microwave dish with three tablespoons water until crisp-tender about 1 ½ to 2 minutes on high (don’t over cook). Immediately refresh in an ice bath. Drain well. Wrap in paper towel, place in a Ziploc bag and refrigerate. This can be done earlier in the day.
Whisk together the mayonnaise, soy sauce, sugar, lemon juice and wasabi paste until sugar is dissolved. Place in a ramekin, cover and refrigerate. Can be made a day ahead of time.
