wonton quiche cups

Ingredients:

24 wonton wrappers (3-1/4 x 3-inch)

4 eggs

1 tablespoon flour

4 tablespoons half & half

4 slices bacon, cooked until crisp, drained and crumbled

3 scallions, while and light green parts, finely chopped

½ cup shredded swiss cheese

½ teaspoon kosher salt and a few grinds of pepper

 

Directions:

Preheat oven to 350 degrees. Coat 24 mini muffin cups with vegetable spray. Gently press one wonton wrapper into each cup allowing the edges to extend above the edges of the muffin cup.

Beat the eggs and flour in a medium bowl until blended. Whisk in the half and half. Stir in the bacon, scallions, cheese. Season with a pinch of kosher salt and a few grinds of pepper. Mix well. Spoon 1 tablespoon into each of the prepared wonton cups.

Bake in the center of the oven until the filling is set, 10-15 minutes until just golden, puffed, and beginning to crisp. Remove and either serve warm or allow to cool to room temperature for up to an hour then rewarm for five minutes in a 350-degree oven. Or cool completely, cover, and refrigerate overnight, rewarm for five to ten minutes in a 350-degree oven.
