turkey and goat cheese sandwiches

Ingredients:

8 slices bakery fresh whole grain seeded bread

¾ lb thinly sliced smoked or roasted turkey

3 ounces creamy goat cheese

4 tsp thick whole cranberry sauce

4 romaine lettuce leaves, torn into pieces

 

Directions:

Top each slice of bread with one teaspoon goat cheese, spread to edges.

On half of the bread spread one teaspoon of cranberry sauce on top of goat cheese.

Top the cranberry layer with thinly sliced turkey.

On the other slices of bread layer pieces of romaine on top of the goat cheese.

Put the two slices together to form four sandwiches. Slice in half on the diagonal.

To transport wrap each sandwich in a piece of waxed paper. Seal with scotch tape.

 

Makes four sandwiches.
