serrano, manchego and cherry confit croutes

Ingredients:

4 Tbsp unsalted butter, softened

2 Tbsp cherry confit jam

½ baguette sliced into ¼ inch rounds

4 Tbsp unsalted butter melted

4 oz Serrano ham, sliced thin

4 oz Manchego cheese, sliced thin with a vegetable peeler

 

Directions:

Preheat oven to 325 degrees. Lightly brush baguette rounds with melted butter. Bake until just crisp about 7 minutes. (Can be done a day ahead of time, cool and store in an airtight container.)

Stir together butter and cherry confit. Spread a thin layer of the butter mixture on the baguette rounds.

Top with a thin slice of Serrano ham, then a thin slice of Manchego.
