serrano and cherry jam toasts

Ingredients:

1 ficelle baguette

2-3 thin slices Serrano ham

1 ounce manchego cheese

2 tablespoons softened butter

2 tablespoons cherry jam

 

Directions:

Cut the ficelle baguette crosswise diagonally into thirds or fourths depending on its length, then slice in half lengthwise. Toast lightly in a toaster oven. Set aside to cool on a rack. Can be made earlier in the day, cool completely then store in airtight container.

Cut or tear the Serrano ham into eight ribbons. Can be made ahead of time. Cover and refrigerate.

Mix the softened butter and cherry jam together in a bowl until combined. Can be made ahead of time. Cover and refrigerate.

With a vegetable peeler make eight ribbons of manchego cheese. Can be made ahead of time. Cover and refrigerate.

Right before serving spread some cherry butter on each toast point. Top with a ribbon of Serrano ham, then manchego.

Makes six to eight toast points.
