roasted hen of the wood mushrooms

Ingredients:

1 large, or 2 small hen of the wood mushrooms

1-2 tablespoons good olive oil

Kosher salt

 

Directions:

Preheat the oven to 375 degrees. Cover a rimmed baking sheet with foil, top with a sheet of parchment paper.

Place the hen of the wood mushroom on the baking sheet. Drizzle with olive oil. Sprinkle with kosher salt. Roast until the edges are crisp and brown, about 18-28 minutes depending on the size of the mushroom.

Serve sliced as a side dish. 

For an hors d'oeuvre- cut off the crisp edges of the mushroom, spread small toasts with softened goat cheese and top with the crisp mushroom trimmings.
