roasted baby carrots

Ingredients:

1 pound baby carrots, peeled and trimmed

2 tablespoons olive oil

½ teaspoon kosher salt

1 tablespoon chopped fresh dill

 

Directions:

Preheat oven to 400 degrees.

Toss carrots with oil and salt on a rimmed baking dish. Roast carrots for 25-30 minutes, flip halfway through.

Toss with fresh dill.

Note: The carrots can be roasted a little earlier, just shorten the cooking time, leave at room temp then reheat for 10 minutes until heated through.

 

Serves 6
