riced cauliflower

Ingredients:

1-lb bag riced cauliflower, or 1 head cauliflower, grated

Pinch of salt and several grinds of freshly ground pepper

 

Directions:

Place the grated cauliflower into a microwave-safe bowl. Stir in the tablespoon of olive oil. Season with slat and pepper. Cover the bowl tightly with plastic wrap. Cook on high for about 3 minutes. Fluff with a fork. Check for seasoning and serve.

 

Serves 4-6
