Ingredients:

1 bag Trader Joe’s Cruciferous Crunch Collection (kale, Brussels sprouts, broccoli, green and red cabbage mix)

¼ cup roughly chopped cilantro

6-8 Tablespoons chutney garlic dressing (see below)

¼ cup dried cranberries

¼ cup candied walnuts

 

Directions:

Place the Cruciferous Crunch Collection veggies in a large bowl. Add a ¼ cup of roughly chopped cilantro. Toss.

Toss the greens with six to eight tablespoons of dressing, or to taste.

Add a handful each of dried cranberries and candied walnuts. And toss once more.

The salad is best made earlier in the day so the flavors can meld and the greens can wilt a bit. Cover and refrigerate, then toss just before serving.

Serves 6

 

Chutney garlic dressing

Ingredients:

¼ cup Major Grey’s chutney

½ teaspoon dried hot pepper flakes

2 tablespoons fresh lemon juice

½ cup water

2 large garlic cloves, chopped

½ cup canola oil

Directions:

Place the chutney, pepper flakes, lemon juice, water and garlic in a tall bowl. With a hand blender blend until smooth. With the motor running slowly add the oil in a steady stream. Blend until emulsified. Season with salt and pepper.

(Note that the dressing can be made days ahead of time.)

Makes 1 cup
