quiche for one

Ingredients:

½ teaspoon softened butter

2 teaspoons dried breadcrumbs

1 egg

¼ cup heavy cream

¼ teaspoon salt

Dash of nutmeg

Dash of cayenne pepper

2 tablespoons grated cheddar, gruyere, or swiss cheese

Filling: ¼ cup finely chopped cooked broccoli, or 2 tablespoon finely chopped sautéed onion and 2 bacon slices cooked and crumbled

 

Directions:

Preheat oven to 375 degrees.

Generously grease a 4-inch ceramic mini tart pan. Add the breadcrumbs and shake to cover the pan completely. Tap out the excess. Set aside.

Place the egg in a large glass measuring cup. Add the heavy cream to make ½ cup. Add the salt, nutmeg and cayenne pepper. With a hand blender, or whisk, blend until frothy.

Sprinkle half of your desired filling on the bottom of the prepared tart pan. Pour in half of the egg mixture. Sprinkle with half of the grated cheese. Sprinkle with the remaining filling, then the rest of the egg mixture, and top with the rest of the cheese.

Place the filled tart pan on a small rimmed baking sheet covered with foil. Bake for 20-25 minutes or until puffed, golden, and cooked through. Let cool 5 minutes before serving.

Makes 1 individual quiche

Note: The recipe can easily be doubled. Serve with a simple mixed green salad for lunch or a light supper.
